Leftovers, in the motorhome too, you have them regularly. At least, I do. A piece or two of carrot, the stem of a broccoli and some courgette ends soon end up in my fridge. And often they are left lying around eh... Well, not any more! This recipe turns leftovers into a delicious snack that you can vary to your heart's content. And, of course, you don't necessarily have to use leftovers.

Delicious as a savoury snack with drinks, in between meals or as a side dish with your dinner. These vegetable biscuits are always a good idea. You can easily save them for the next day and if you want to go all out: decorate them with crème fraîche and fresh herbs or a tomato, for example. Or dress up and top the crème fraîche with a slice of smoked salmon.
Healthy and tasty! I think you can even get children to eat vegetables this way. Without complaints. Another tasty combination to try: spring onion, corn and carrot with Mexican herbs.

Of course, this depends on the number of persons, how big the appetite is and how many leftovers you have lying around.
Tip: firmer vegetables like carrots and pumpkin, but also courgettes can be grated instead of cut. With the latter, make sure you squeeze out the grater. This will prevent you from getting very wet biscuits when baking.

And, want to make friends for life at the RV park or campsite? Then make the camper truffles right away too. But watch out, you'll keep putting them in your mouth. So mainly hand them out to the neighbours, or go for an extra run this afternoon. This is also a great recipe to make with kids!

Depends on the type of biscuits you buy and how many biscuits are in one pack. On average, one pack of monchou is enough for one pack of biscuits. But even if you happen to have half a pack of speculoos lying around, this of course lends itself perfectly to motorhome truffles.
